Mutton Sekuwa Set

Mutton Sekuwa Set is for festive evenings and bigger appetites, with bold smoky flavor throughout.
Ingredients
- 700 g Boneless mutton (goat), in 1-inch cubes
- 4 tbsp Mustard oil
- 3 tbsp Ginger-garlic paste
- 1 tsp Timur (Sichuan pepper), ground
- 1 1/2 tsp Red chili powder
- 1 tsp each Cumin and coriander powder
- 1/2 tsp Turmeric
- 1 tsp Garam masala
- 2 Lemon
- 2 Red onion
- 1 each Cucumber and tomato, for salad
- 1 cup Tomato-sesame chutney
- 10 Skewers
- to taste Salt
Steps
- Serves 3 as a full platter. Mix the mutton with mustard oil, ginger-garlic paste, timur, chili powder, cumin, coriander, turmeric, garam masala, the juice of one lemon and salt.
- Marinate at least 6 hours, ideally overnight, because goat needs the time to tenderise.
- Thread the cubes onto soaked skewers, leaving a little space between pieces so the heat gets around them.
- Burn charcoal down to glowing embers and grill the skewers 15-20 minutes, turning often and basting with leftover marinade, until charred outside and cooked through.
- While they grill, slice the onion into rings and toss the cucumber and tomato with lemon and salt for the salad.
- Rest the skewers 5 minutes so the juices redistribute.
- Plate the sekuwa with the onion rings, salad, tomato-sesame chutney and lemon wedges.
