Chatpate

Chatpate is one of the most addictive budget snacks, perfect for spicy evening cravings.
Ingredients
- 4 cups Puffed rice (bhuja)
- 1 medium Potato, boiled and diced
- 1 Red onion, finely chopped
- 1 Tomato, finely chopped
- 1/2 Cucumber, finely chopped
- 4 Green chili, finely chopped
- 1 tsp Red chili powder
- 1 tsp Cumin powder
- 2 tbsp Mustard oil
- 1 Lemon
- 1/4 cup Roasted peanuts
- 1/4 cup Coriander leaves, chopped
- to taste Black salt and salt
Steps
- Serves 2 to 3 and is deliberately fiery; four green chilies plus the chili powder is the point of the dish, not a garnish.
- Boil the potato until just tender, cool it, and cut it into small cubes so it does not turn to mush in the toss.
- Chop the onion, tomato, cucumber, green chilies and coriander as fine as you can, since every spoonful should carry all of them.
- Warm the mustard oil until it just smokes and let it cool; raw mustard oil tastes harsh.
- Tip the puffed rice into a large bowl with the roasted peanuts only when you are ready to eat.
- Add everything else, pour over the mustard oil and lemon juice, and toss hard for 20 seconds.
- Taste and correct the salt, lemon and chili, then serve immediately in paper cones; it goes soft within minutes.
