Ingredients

  • 400 g Chow mein noodles
  • 300 g Boneless chicken, in strips
  • 2 cups Cabbage, shredded
  • 1 Carrot, julienned
  • 1 Capsicum, sliced
  • 1 Onion, sliced
  • 1/2 cup Spring onion, in lengths
  • 1 tbsp Garlic, minced
  • 1 tsp Ginger, minced
  • 3 tbsp Soy sauce
  • 1 tsp Dark soy sauce
  • 1 tbsp Chili sauce
  • 1 tsp Vinegar
  • 1/4 tsp Turmeric
  • 1 tsp Black pepper
  • 4 tbsp Vegetable oil
  • to taste Salt

Steps

  1. Serves 3. Boil the noodles only until they bend without breaking, rinse them under cold water, and toss with a spoon of oil.
  2. Marinate the chicken strips in a little soy sauce and pepper while you cut the vegetables.
  3. Heat a wok until it smokes, add 2 tablespoons of oil, and sear the chicken in a single layer without stirring so it browns, then set it aside.
  4. Add the remaining oil, then the garlic and ginger for 20 seconds.
  5. Throw in the onion, carrot, cabbage and capsicum and toss on the highest heat for 2 minutes; they should still snap.
  6. Add the noodles with the turmeric and let them sit against the hot metal for 30 seconds at a time before tossing, which is where the wok char comes from.
  7. Pour the soy sauces, chili sauce and vinegar down the side of the wok, return the chicken, and toss everything together.
  8. Finish with spring onion and pepper off the heat and serve straight away.
