Pakoda

Pakoda is the snack that comes out the moment it starts raining — onion, potato and greens dipped in a spiced gram-flour batter and dropped straight into hot oil.
Ingredients
- 1 cup Gram flour (besan)
- 1 large Onion, thinly sliced
- 1 small Potato, thinly sliced
- 1 cup Spinach leaves
- 1-2 Green chili, chopped
- 1/2 tsp Cumin seeds
- 1/2 tsp Red chili powder
- a pinch Baking soda
- 2 medium Tomato, for chutney
- 500 ml Vegetable oil, for deep frying
- to taste Salt
Steps
- Serves 2. Whisk the gram flour with water, salt, cumin, chili powder and a pinch of baking soda into a thick batter.
- Fold the sliced onion, potato, spinach and green chili into the batter until every piece is coated.
- Char the tomatoes for the chutney, peel, and blend with salt and a splash of water.
- Drop spoonfuls of the battered vegetables into hot oil.
- Fry until deep golden and crisp, turning once, about 4-5 minutes.
- Drain on a rack and serve hot with the tomato chutney.
