Sukuti Sadeko

Sukuti Sadeko is chewy, smoky, and bright with lemon—a powerful snack for serious savory cravings.
Ingredients
- 200 g Sukuti (dried buffalo strips)
- 4 tbsp Mustard oil
- 1 large Red onion, thinly sliced
- 1 Tomato, deseeded and chopped
- 4 Green chili, chopped
- 2 tsp Dried red chili powder
- 1 tsp Timur (Sichuan pepper), ground
- 1 tsp Cumin powder
- 1/2 tsp Turmeric
- 4 cloves Garlic, minced
- 1 tbsp Ginger, minced
- 1 Lemon
- 1/2 cup Coriander leaves, chopped
- to taste Salt
Steps
- Serves 3 as a snack, and it is meant to be hot: four green chilies plus two teaspoons of chili powder.
- If the dried strips are rock hard, soak them in warm water for 10 minutes and squeeze them dry.
- Roast the strips directly over a flame or in a dry pan until they puff slightly and smell smoky.
- Shallow fry them in a tablespoon of the mustard oil for 2 minutes if you want a softer chew, then drain.
- Cut them into small pieces with scissors; dried meat is too tough to chop cleanly with a knife.
- Heat the remaining mustard oil until it smokes and let it cool a little, since raw mustard oil tastes bitter in a cold salad like this.
- Toss the sukuti with the onion, tomato, green chilies, chili powder, timur, cumin, turmeric, garlic, ginger, salt and the mustard oil.
- Add lemon juice and coriander, then let it sit 10 minutes so the meat softens in the dressing before serving.
