Ingredients

  • 1 1/2 cups Long-grain rice
  • 1 cup Masoor or kalo dal
  • 1 tsp Jimbu (Himalayan aromatic herb)
  • 1 tsp Cumin seeds
  • 1 Dried red chili, whole
  • 2 tbsp Ghee
  • 400 g Potato and cauliflower for tarkari
  • 250 g Mustard greens or spinach (saag)
  • 3 medium Tomato, for achar
  • 2 tbsp White sesame seeds
  • 8 cloves Garlic
  • 1 tbsp Ginger, minced
  • 1 medium Onion, sliced
  • 1 tsp Turmeric
  • 4 tbsp Mustard oil
  • to taste Salt

Steps

  1. Serves 2. Start the dal first: simmer the lentils with turmeric, a smashed garlic clove and 4 cups water for 25-30 minutes until they collapse.
  2. Set the rice to cook in 3 cups of water while the dal simmers.
  3. For the tarkari, fry cumin seeds in mustard oil, add onion, then the diced potato and cauliflower with turmeric and a little water, and cook covered until tender.
  4. Roast the tomatoes directly over a flame until blackened, peel, and grind with toasted sesame, garlic and the dried chili for the achar.
  5. Just before serving, temper the dal: heat ghee until it shimmers, drop in jimbu and cumin until they darken, and pour it over the dal.
  6. Wilt the greens in a hot pan with garlic for barely 30 seconds so they stay green.
  7. Plate rice in the centre with dal, tarkari, saag and achar in separate bowls around it.
