Thukpa

Thukpa is the perfect bowl for cold days, bringing warmth, broth, noodles, and comfort together.
Ingredients
- 200 g Wheat noodles
- 6 cups Vegetable stock
- 1 Carrot, julienned
- 2 cups Cabbage, shredded
- 1/2 cup Green beans, sliced
- 1 Capsicum, sliced
- 1 Onion, sliced
- 1 Tomato, chopped
- 1 tbsp Garlic, minced
- 1 tsp Ginger, minced
- 1 tbsp Soy sauce
- 1/2 tsp Timur or black pepper, ground
- 2 tbsp Vegetable oil
- 1/2 cup, chopped Spring onion and coriander
- to taste Salt
Steps
- Serves 2. Heat the oil in a deep pot and fry the garlic, ginger and onion until soft but not browned.
- Add the carrot, beans and cabbage and stir for 2 minutes, then the tomato, and cook until it breaks down.
- Pour in the vegetable stock, season with soy sauce and salt, and simmer gently for 10 minutes so the broth takes on the vegetables.
- Boil the noodles separately in salted water until just tender, drain, and divide them between two deep bowls. Cooking them in the broth turns it cloudy and starchy.
- Ladle the hot broth and vegetables over the noodles.
- Finish with ground timur or black pepper, spring onion and coriander, and serve straight away while it steams.
