Ingredients

  • 200 g Wheat noodles
  • 6 cups Vegetable stock
  • 1 Carrot, julienned
  • 2 cups Cabbage, shredded
  • 1/2 cup Green beans, sliced
  • 1 Capsicum, sliced
  • 1 Onion, sliced
  • 1 Tomato, chopped
  • 1 tbsp Garlic, minced
  • 1 tsp Ginger, minced
  • 1 tbsp Soy sauce
  • 1/2 tsp Timur or black pepper, ground
  • 2 tbsp Vegetable oil
  • 1/2 cup, chopped Spring onion and coriander
  • to taste Salt

Steps

  1. Serves 2. Heat the oil in a deep pot and fry the garlic, ginger and onion until soft but not browned.
  2. Add the carrot, beans and cabbage and stir for 2 minutes, then the tomato, and cook until it breaks down.
  3. Pour in the vegetable stock, season with soy sauce and salt, and simmer gently for 10 minutes so the broth takes on the vegetables.
  4. Boil the noodles separately in salted water until just tender, drain, and divide them between two deep bowls. Cooking them in the broth turns it cloudy and starchy.
  5. Ladle the hot broth and vegetables over the noodles.
  6. Finish with ground timur or black pepper, spring onion and coriander, and serve straight away while it steams.
