Spiced Egg Salad

Three boiled eggs, quartered and tossed with onion, tomato, green chili and mustard oil. It takes ten minutes, costs almost nothing, and is the most common high-protein plate in any Nepali bhatti.
Ingredients
- 3 Eggs
- 1 small Onion, finely chopped
- 1 small Tomato, finely chopped
- 1 Green chili, chopped
- 2 tbsp Coriander leaves, chopped
- 2 tsp Mustard oil
- 1 tsp Lemon juice
- to taste Salt
Steps
- Serves 1-2. Boil the eggs 9 minutes from a rolling boil, then cool them under running water and peel.
- Quarter them lengthways.
- Toss the onion, tomato, green chili and coriander with the mustard oil, lemon juice and salt.
- Fold the egg quarters through at the end so they stay whole, and serve.
