Spiced Egg Salad

Three boiled eggs, quartered and tossed with onion, tomato, green chili and mustard oil. It takes ten minutes, costs almost nothing, and is the most common high-protein plate in any Nepali bhatti.

Ingredients

  • 3 Eggs
  • 1 small Onion, finely chopped
  • 1 small Tomato, finely chopped
  • 1 Green chili, chopped
  • 2 tbsp Coriander leaves, chopped
  • 2 tsp Mustard oil
  • 1 tsp Lemon juice
  • to taste Salt

Steps

  1. Serves 1-2. Boil the eggs 9 minutes from a rolling boil, then cool them under running water and peel.
  2. Quarter them lengthways.
  3. Toss the onion, tomato, green chili and coriander with the mustard oil, lemon juice and salt.
  4. Fold the egg quarters through at the end so they stay whole, and serve.
