Ingredients

  • 250 g Spaghetti
  • 4 tbsp Olive oil
  • 8 cloves Garlic, thinly sliced
  • 500 g Whole peeled tomato
  • 1 tbsp Tomato paste
  • 1/2 tsp Chili flakes
  • 1 tsp Dried oregano
  • a handful Fresh basil
  • 1 pinch Sugar
  • to taste Salt and black pepper

Steps

  1. Serves 2. Salt the pasta water heavily; it is the only chance to season the spaghetti itself.
  2. Cook the spaghetti one minute short of the packet time and keep a cup of the starchy water.
  3. Meanwhile warm the olive oil over low heat with the sliced garlic until it turns pale gold and perfumes the oil.
  4. Add the chili flakes for a few seconds, then the tomato paste, and let it darken slightly.
  5. Crush the peeled tomatoes in by hand, add the sugar and oregano, and simmer 15-20 minutes until thick.
  6. Lift the drained spaghetti straight into the sauce with half a cup of pasta water.
  7. Toss over the heat for a minute or two until the sauce coats every strand, then tear the basil over and serve.
