Spaghetti

Spaghetti is a familiar western-style option for lighter pasta cravings.
Ingredients
- 250 g Spaghetti
- 4 tbsp Olive oil
- 8 cloves Garlic, thinly sliced
- 500 g Whole peeled tomato
- 1 tbsp Tomato paste
- 1/2 tsp Chili flakes
- 1 tsp Dried oregano
- a handful Fresh basil
- 1 pinch Sugar
- to taste Salt and black pepper
Steps
- Serves 2. Salt the pasta water heavily; it is the only chance to season the spaghetti itself.
- Cook the spaghetti one minute short of the packet time and keep a cup of the starchy water.
- Meanwhile warm the olive oil over low heat with the sliced garlic until it turns pale gold and perfumes the oil.
- Add the chili flakes for a few seconds, then the tomato paste, and let it darken slightly.
- Crush the peeled tomatoes in by hand, add the sugar and oregano, and simmer 15-20 minutes until thick.
- Lift the drained spaghetti straight into the sauce with half a cup of pasta water.
- Toss over the heat for a minute or two until the sauce coats every strand, then tear the basil over and serve.
