Cheese Fries

Cheese Fries are a pure comfort snack for relaxed fun cravings.
Ingredients
- 700 g Floury potatoes
- 1 litre Vegetable oil, for frying
- 2 tbsp Butter
- 2 tbsp Cornflour
- 1 cup Milk, warm
- 150 g Cheddar, grated
- 1 pinch Mustard powder
- 1/2 tsp Chili flakes
- to taste Salt and black pepper
Steps
- Serves 2 to 3. Cut the potatoes into 1 cm batons, rinse away the surface starch, parboil them 4 minutes, and dry them completely.
- Fry at 150C for 5-6 minutes without colouring, lift out, then fry again at 190C until golden and crisp.
- Drain on a rack and salt the fries while they are still hot.
- For the sauce, whisk the cornflour into a splash of cold milk until smooth; a cornflour sauce keeps this gluten-free, unlike a flour roux.
- Warm the rest of the milk with the butter, whisk the slurry in, and cook 2 minutes until it thickens to a pouring sauce, then season with mustard powder, salt and pepper.
- Take the pan off the heat before stirring in the cheddar, which keeps the sauce smooth instead of grainy.
- Pour it over the hot fries in a shallow dish, scatter chili flakes, and eat immediately while the cheese still pulls.
