Ingredients

  • 700 g Floury potatoes
  • 1 litre Vegetable oil, for frying
  • 2 tbsp Butter
  • 2 tbsp Cornflour
  • 1 cup Milk, warm
  • 150 g Cheddar, grated
  • 1 pinch Mustard powder
  • 1/2 tsp Chili flakes
  • to taste Salt and black pepper

Steps

  1. Serves 2 to 3. Cut the potatoes into 1 cm batons, rinse away the surface starch, parboil them 4 minutes, and dry them completely.
  2. Fry at 150C for 5-6 minutes without colouring, lift out, then fry again at 190C until golden and crisp.
  3. Drain on a rack and salt the fries while they are still hot.
  4. For the sauce, whisk the cornflour into a splash of cold milk until smooth; a cornflour sauce keeps this gluten-free, unlike a flour roux.
  5. Warm the rest of the milk with the butter, whisk the slurry in, and cook 2 minutes until it thickens to a pouring sauce, then season with mustard powder, salt and pepper.
  6. Take the pan off the heat before stirring in the cheddar, which keeps the sauce smooth instead of grainy.
  7. Pour it over the hot fries in a shallow dish, scatter chili flakes, and eat immediately while the cheese still pulls.
