Chicken Burger Combo

Chicken Burger Combo feels complete and reliable when you want one-click decision making.
Ingredients
- 2 Boneless chicken thigh fillets
- 1/2 cup and 2 tbsp All-purpose flour and cornflour
- 1 Egg, beaten
- 1 cup Breadcrumbs
- 1 tsp each Paprika and black pepper
- 2 Burger bun
- 1 tbsp Butter, for the buns
- 3 tbsp Mayonnaise
- to layer Lettuce, tomato and onion
- 400 g Floury potatoes, for the fries
- 1 litre Vegetable oil, for frying
- 2 glasses Chilled cola or lemon soda
- to taste Salt
Steps
- Makes 2 combos. Cut the potatoes into 1 cm batons, rinse off the starch, parboil 4 minutes, and dry them thoroughly.
- Butterfly and flatten the chicken fillets, season with salt, pepper and paprika, then coat them flour, egg, breadcrumbs and rest them 10 minutes.
- Fry the potatoes at 150C for 5-6 minutes without colouring them, then lift them out to cool.
- Fry the crumbed chicken at 170C for 4-5 minutes a side until golden and cooked to 74C inside, and drain on a rack.
- Toast the buttered buns and build each burger with mayonnaise, lettuce, the hot fillet, tomato and onion.
- Return the potatoes to 190C oil for 2-3 minutes until golden, then drain and salt them straight away.
- Serve the burger and fries together with the chilled drink poured over ice.
