Ingredients

  • 3 medium Potato, boiled and cooled
  • 1 1/2 cups Carrot, green beans and peas, boiled
  • 1 cup, plus 1 cup for coating Breadcrumbs
  • 2 tbsp Cornflour
  • 1 tbsp Ginger and green chili, minced
  • 1/2 tsp Garam masala
  • 1/2 tsp Chaat masala
  • 3 Burger buns
  • 1 tbsp Butter, for the buns
  • 2 tbsp each Mayonnaise and tomato ketchup
  • to layer Lettuce, tomato and onion
  • 5 tbsp Vegetable oil, for shallow frying
  • to taste Salt

Steps

  1. Makes 3 burgers. Mash the cooled boiled potato and finely chop or crush the other boiled vegetables; any leftover moisture will make the patty fall apart.
  2. Mix in a cup of breadcrumbs, the cornflour, ginger, green chili, garam masala, chaat masala and salt until it holds together.
  3. Shape three flat patties a little wider than the buns, since they shrink.
  4. Chill them for 20 minutes so they firm up before frying.
  5. Press each patty into the remaining breadcrumbs on both sides.
  6. Shallow fry over medium heat for 3-4 minutes a side until deeply golden and crisp.
  7. Butter and toast the buns cut-side down, spread mayonnaise and ketchup, and build with lettuce, the hot patty, tomato and onion.
