French Fries

French Fries are the simplest crunchy comfort snack and work with almost anything.

Ingredients

  • 700 g Floury potatoes
  • 1 litre Vegetable oil, for frying
  • to taste Salt

Steps

  1. Serves 3. Peel the potatoes and cut them into even 1 cm batons so they cook at the same rate.
  2. Rinse them in cold water until the water runs clear, which washes off the surface starch that makes fries stick together.
  3. Simmer the batons in salted water for 4-5 minutes until the edges just soften but they still hold their shape, then drain gently.
  4. Spread them on a tray and let them dry completely; any surface water will spit in the oil and steam the crust.
  5. Fry in batches at 150C for 5-6 minutes without letting them colour, then lift out and cool.
  6. Raise the oil to 190C and fry again for 2-3 minutes until golden and blistered.
  7. Drain on a rack and salt them immediately while the surface is still hot enough to hold it.
