French Fries

French Fries are the simplest crunchy comfort snack and work with almost anything.
Ingredients
- 700 g Floury potatoes
- 1 litre Vegetable oil, for frying
- to taste Salt
Steps
- Serves 3. Peel the potatoes and cut them into even 1 cm batons so they cook at the same rate.
- Rinse them in cold water until the water runs clear, which washes off the surface starch that makes fries stick together.
- Simmer the batons in salted water for 4-5 minutes until the edges just soften but they still hold their shape, then drain gently.
- Spread them on a tray and let them dry completely; any surface water will spit in the oil and steam the crust.
- Fry in batches at 150C for 5-6 minutes without letting them colour, then lift out and cool.
- Raise the oil to 190C and fry again for 2-3 minutes until golden and blistered.
- Drain on a rack and salt them immediately while the surface is still hot enough to hold it.
