Ingredients

  • 400 g Chow mein noodles
  • 3 cups Cabbage, shredded
  • 1 cup Green beans, sliced thin
  • 2 Carrot, julienned
  • 1 Capsicum, sliced
  • 1 Onion, sliced
  • 3/4 cup Spring onion, in lengths
  • 1 tbsp Garlic, minced
  • 1 tsp Ginger, minced
  • 3 tbsp Soy sauce
  • 1 tsp Vinegar
  • 1/4 tsp Turmeric
  • 1 tsp Black pepper
  • 4 tbsp Vegetable oil
  • to taste Salt

Steps

  1. Serves 3. Boil the noodles until just bendy, rinse them cold to stop the cooking, and toss them with a spoon of oil so they stay loose.
  2. Cut all the vegetables to a similar thin size so they cook in the same couple of minutes.
  3. Heat a wok until it smokes and add the oil, then the garlic and ginger for 20 seconds.
  4. Add the onion and carrot, then the beans, cabbage and capsicum, tossing hard on the highest heat for 2-3 minutes so they stay crunchy and bright.
  5. Tip in the noodles with the turmeric and let them rest against the hot wok between tosses to pick up a little colour.
  6. Season with soy sauce poured down the side of the wok, vinegar, salt and plenty of black pepper; the heat here comes from pepper rather than chili, which keeps it mild.
  7. Fold the spring onion through off the heat and serve immediately.
