Veg Chowmein

Veg Chowmein is quick, colorful, and satisfying, with plenty of crisp vegetables in every forkful.
Ingredients
- 400 g Chow mein noodles
- 3 cups Cabbage, shredded
- 1 cup Green beans, sliced thin
- 2 Carrot, julienned
- 1 Capsicum, sliced
- 1 Onion, sliced
- 3/4 cup Spring onion, in lengths
- 1 tbsp Garlic, minced
- 1 tsp Ginger, minced
- 3 tbsp Soy sauce
- 1 tsp Vinegar
- 1/4 tsp Turmeric
- 1 tsp Black pepper
- 4 tbsp Vegetable oil
- to taste Salt
Steps
- Serves 3. Boil the noodles until just bendy, rinse them cold to stop the cooking, and toss them with a spoon of oil so they stay loose.
- Cut all the vegetables to a similar thin size so they cook in the same couple of minutes.
- Heat a wok until it smokes and add the oil, then the garlic and ginger for 20 seconds.
- Add the onion and carrot, then the beans, cabbage and capsicum, tossing hard on the highest heat for 2-3 minutes so they stay crunchy and bright.
- Tip in the noodles with the turmeric and let them rest against the hot wok between tosses to pick up a little colour.
- Season with soy sauce poured down the side of the wok, vinegar, salt and plenty of black pepper; the heat here comes from pepper rather than chili, which keeps it mild.
- Fold the spring onion through off the heat and serve immediately.
