Aloo Paratha Set

Aloo Paratha Set is a hearty breakfast or quick lunch with a golden crust and warmly spiced potato center.
Ingredients
- 2 cups Whole-wheat flour (atta)
- about 3/4 cup Water, for the dough
- 4 medium Potato, boiled and cooled
- 1 Green chili, minced
- 1 tsp Ginger, minced
- 1/4 cup Coriander leaves, chopped
- 1 tsp Cumin powder
- 1 tsp Coriander powder
- 1/2 tsp Amchur (dried mango powder)
- 1/4 tsp Garam masala
- 4 tbsp Ghee or butter, for the griddle
- 1 cup Yogurt
- 2 tbsp Mixed achar
- to taste Salt
Steps
- Makes 4 parathas, serving 2. Knead the atta with water and a little salt into a soft dough and rest it 20 minutes under a cloth.
- Boil the potatoes, cool them completely, and grate them rather than mashing them warm; hot or wet potato makes the filling leak through the dough.
- Mix the grated potato with the green chili, ginger, coriander leaves, cumin, coriander powder, amchur, garam masala and salt, adding no water at all.
- Roll a small disc of dough, set a ball of filling in the middle, gather the edges up over it, and pinch the top shut.
- Flatten the parcel, dust it with flour, and roll it out gently and evenly to about 7 inches, working from the centre outward.
- Cook it on a hot tawa until pale spots appear, flip, smear the surface with ghee, then flip again.
- Press the edges down with a folded cloth so they cook too, until both sides are golden and blistered.
- Serve hot off the pan with a bowl of cold yogurt and a spoon of achar.
