Loaded Fries

Loaded Fries are a richer snack for hangouts, sharing, or lazy comfort cravings.
Ingredients
- 700 g Floury potatoes
- 1 litre Vegetable oil, for frying
- 2 tbsp Butter
- 2 tbsp Cornflour
- 1 1/2 cups Milk, warm
- 150 g Cheddar, grated
- 3 tbsp Mayonnaise
- 1/3 cup Spring onion, sliced
- 2 tbsp Pickled jalapeno, sliced
- 1 tsp each Chili flakes and oregano
- to taste Salt and black pepper
Steps
- Serves 3 to share. Cut the potatoes into 1 cm batons, rinse off the starch, parboil 4 minutes, and dry them thoroughly.
- Fry at 150C for 5-6 minutes, cool, then fry again at 190C until golden and crisp.
- For the cheese sauce, whisk the cornflour into a little of the cold milk to make a slurry.
- Warm the rest of the milk with the butter, whisk the slurry in, and cook for 2 minutes until it is thick enough to coat a spoon.
- Take it off the heat before adding the cheddar so the sauce stays smooth instead of splitting.
- Pile the hot salted fries in a shallow dish and pour the cheese sauce over while both are hot.
- Drizzle with mayonnaise and scatter spring onion, jalapeno, chili flakes and oregano. Serve immediately, before the fries soften under the sauce.
